No mayo: budget-friendly eggplant and melted cheese spread in minutes

Eggplant is a healthy vegetable that can be baked, fried, stewed, added to salads and appetizers. In addition, it is the basis for a tasty and budget-friendly spread on bread, which can be complemented with savory spices, herbs and melted cheese.

Ingredients:
- eggplant - 2 pcs
- processed cheese - 2 pcs
- garlic - 3 cloves
- lemon juice - 1-2 tsp.
- sesame
- salt, pepper
- olive oil
Method of preparation:
1. First, wash the eggplants and cut off their tails. Cut the vegetables in half and make cross cuts in each half. Place in a baking dish.
2. Crush the garlic with a knife (no need to peel). Place also in the mold. Pour olive oil, salt and bake in the oven at 190-200 degrees for 20 minutes.
3. Transfer the baked eggplants to a blender bowl, add melted cheese, sesame seeds, pepper, lemon juice. Blend everything until homogeneous.
4. Serve the ready spread with toasted bread. Bon appetit!
