Lecho with rice for winter as a simple appetizer

Lecho for winter is a delicious vegetable appetizer that can be eaten instead of salads. It is very tasty to eat with meat, fish and various porridges. It comes out very hearty if you add rice.
The idea of cooking lecho with rice is published on the Instagram page of food blogger Oksana Dorosh (oksana_dorosh_rezeptu). There are a lot of seasonal vegetables, as well as vinegar to make the appetizer better stored.
Ingredients:
- tomatoes - 3 kg
- onion - 1 kg
- carrots - 1 kg
- sweet pepper - 1 kg
- steamed raw rice - 1 cup
- sugar - 1 cup
- salt - 3 tbsp.
- oil - 400 g.
- vinegar - 100 ml.
- peppercorn pepper - as desired
Method of preparation:
1. Grind tomatoes in a meat grinder (or blender).
2. Chop the onions into rings.
3. Grate the carrots on a large grater.
4. Chop peppers as desired.
5. Mix everything and cook for 1 hour from boiling.
6. Add vinegar.
7. Boil, pour into jars and sterilize: 0,5 l jars is 5 minutes, 1 l is 10 minutes.
8. Turn over and cover with a blanket until completely cooled.
