In Ukraine, it is customary to serve broth or borscht at weddings. But Italy, for example, has its own first course that is served at every wedding. It's an Italian wedding soup, which is very similar to the usual meatball soup.

The recipe for Italian wedding soup was shared on Instagram by chef Valentyna Kushch. She also added that the main ingredients of the soup are spinach, meatballs, Parmesan, and pasta.

Ingredients for meatballs

  • Minced meat - 600 gr
  • Onion - 1 pc
  • Breadcrumbs - 4 tbsp
  • Lemon zest - 1 pc
  • Egg - 1 pc
  • Salt
  • Pepper
  • Dry garlic
  • Parmesan cheese

Ingredients for the soup

  • Meatballs
  • Carrots - 1 pc
  • Onion - 1 pc
  • Petite pasta - 200-250 g
  • Spinach - 100 g
  • Broth or water
  • Salt
  • Pepper
  • Dry garlic
  • Parmesan cheese for serving

Method of preparation

1. First, make the meatballs. To do this, mix all the ingredients until smooth and form balls.

2. Fry the meatballs in a frying pan with a little oil. Transfer to a saucepan and cover with broth or water. Cook for 30 minutes.

3. Fry the carrots and onions in a frying pan and add to the meatballs.

4. Add the pasta to the soup. It is important to pay attention to the cooking time of the pasta.

5 Add salt and pepper to taste, as well as spinach. Cook for 1 minute and turn off the heat.

6. Sprinkle with grated Parmesan cheese when serving.
