How to stew zucchini for lunch: a very quick and hearty dish

To cook zucchini for dinner deliciously, it is worth stewing them. You do not even need meat, because many other vegetables can be combined. The dish turns out to be very hearty and budget-friendly.

Ingredients:
- 1 onion
- 1 carrot
- 3 sweet peppers
- 3 small zucchini
- 2 tbsp. tomato paste
- salt, pepper
- hot pepper, garlic, herbs
Cooking method:
1. Cut everything into small cubes. Carrots can be grated.
2. Fry alternately until soft: onions, carrots and peppers.
3. It is better to add zucchini in 2-3 turns so that they do not let a lot of juice.
4. Salt, season with pepper and add hot pepper and tomato paste. Stir.
5. Cover with a lid and stew over medium (not low) heat until there is almost no moisture left. Be sure to stir so it doesn't stick.
6. Garlic and herbs are best added at the end. It is delicious to serve on toasted bread while cold.
