How to replace eggs in muffins: a very easy option
Classic muffins can be made without eggs by replacing them with an ordinary banana. In this form, baking will be more healthy and will not even harm your figure.
The recipe for banana muffins without eggs was published on the Tasty and Useful cooking channel on YouTube.
Ingredients:
- oatmeal - 3-4 tbsp.
- whole wheat flour - 5-6 tbsp.
- baking powder - 1 tsp.
- coconut flakes - 100 g
- sugar - 5 tbsp
- salt - a pinch
- medium bananas - 2 pcs
- oil (coconut oil in the recipe) - 4 tbsp
- apple cider vinegar\lemon juice - 3 tbsp
- milk (almond in the recipe) - 100 ml
Method of preparation:
1. Mix all dry ingredients together: cereal, flour, baking powder, coconut, sugar and salt.
2. Mash the banana, then mix it with the oil, apple cider vinegar/lemon juice and milk. Stir until smooth.
3. Mix the dry and liquid ingredients. Stir until smooth.
4. Put the resulting dough into the molds.
5. Bake at 180 degrees for 35-40 minutes.
6. Allow the muffins to cool, then remove from the molds and sprinkle with powdered sugar as desired.
