How to cook zucchini circles with cheese: simple summer appetizer

Zucchini is a versatile base for preparing delicious appetizers. Everything will turn out quite quickly, because the vegetable is quite simple to fry in crispy breading. On top you can put a lot of grated cheese and herbs.

Ingredients:
- zucchini (small) - 2 pcs
- salt - to taste
- egg - 1 pc
- flour
- breadcrumbs
Ingredients for stuffing:
- garlic - 2-3 cloves
- mayonnaise - 2 tbsp.
- cheese - 125 g
- dill - a few sprigs
Method of preparation:
1. Slice the zucchini into circles, salt, mix and set aside to let them juice.
2. Drain excess liquid, you can also dry them lightly with paper towels.
3. Dip the zucchini ring in flour, then in beaten egg and finally in breadcrumbs.
4. Fry over low heat in heated oil on both sides until cooked through and golden.
5. Place on a paper towel to pick up excess fat.
6. While the cooked zucchini is cooling, prepare the filling. In a bowl, mix the squeezed garlic, mayonnaise and grated cheese until smooth.
7. Spread the zucchini slices with the cottage cheese filling and place on a plate.
8. Sprinkle chopped dill on top.
9. If desired, you can decorate it with finely chopped tomato or simply place a tomato circle on top.
