Ingredients:

  • pumpkin puree - 420 g
  • coconut milk - 375 g
  • corn starch - 3 tbsp
  • coconut syrup (or any other) - 2 tbsp
  • sugar - ¼ cup
  • ground cinnamon - ½ tsp.
  • nutmeg - ½ tsp.
  • ground ginger - ½ tsp.
  • vanilla sugar - 1 tsp.

Method of preparation:

1. Bake the pumpkin until soft and puree-like.

2. Whisk all the pudding ingredients together in a medium-sized bowl with a whisk until smooth.

3. Pour into a pan and let it boil over medium heat until thickened for 6-8 minutes, stirring frequently to prevent lumps from forming.

4. Transfer to serving cups or jars.

5. Put in the refrigerator for an hour and a half.
