How to cook stewed zucchini: can be used as a spread

Zucchini can not only be baked, fried in batter, made into casseroles and pickled, but also stewed. Stew vegetables, as a rule, in cream or tomato paste, adding savory spices. Such a dish can be eaten not only on its own, but also used as a spread on sandwiches.
Foodblogger Tatyana with the nickname tanyushina shared a recipe for stewed zucchini in tomato paste on her Instagram page .
Ingredients:
- onion - 1 pc
- carrots - 1 pc
- pepper - 3 pcs
- zucchini - 3 pcs
- tomato paste - 2 tbsp. l.
- salt, pepper
- hot pepper, garlic, herbs
Method of preparation:
1. Onion, pepper and zucchini cut into small cubes, carrots can be grated.
2. Fry the prepared ingredients one by one: onions, carrots, peppers.
3. In the end, add zucchini to the vegetables (it is better to do it in 2-3 stages, so that they do not let a lot of juice). Also add salt, pepper, hot pepper and tomato paste. Cover with a lid and stew over medium heat until the moisture evaporates.
4. At the end of cooking add herbs and garlic. Bon appetit!
