How to cook light cheese soup with meatballs: the easiest recipe

Cheese soup is a light and easy-to-prepare lunch dish based on melted or hard cheese. The first course is often supplemented with meat, mushrooms, sausages and even meatballs. The soup has a pleasant creamy texture and delicate flavor.
Food blogger Yulia Fedorenko (fedorenko_pp) shared a recipe for cheese soup with meatballs on her Instagram page.
Ingredients:
- minced chicken - 300 g
- potatoes - 250 g
- onion - 50 g
- carrots - 50 g
- cream cheese - 100 g
- salt
- herbs
- water - 760-800 ml
Method of preparation:
1. Put the chicken fillet in a blender, add salt and spices. Blend until smooth and form into meatballs.
2. Chop the onion and fry until golden brown in a saucepan.
3. Cut or grate the carrots, add to the onions and continue to fry until soft.
4. Chop the potatoes and add to the vegetables with water. Cook for 10 minutes.
5. Add the meatballs and cook for 5 minutes.
6. Add the cheese, stir and bring to a boil.
7. At the end, add herbs and remove from heat.
