How to cook eggplant babaganoush: an original alternative to caviar

Babaganoush is an original eggplant appetizer, which will perfectly complement the festive and everyday table. In fact, such an oriental delicacy is an alternative to our eggplant caviar. The main ingredient is exactly the pulp from the vegetable, which becomes very tender after baking. Slices of bread and pita bread are dipped into it.

A nutritionist with the nickname dorinellla shared a recipe for eggplant babaganoush on her Instagram page.

Recipe for babaganoush with aubergine, garlic and tahina

Ingredients:

  • eggplants - 2 pcs
  • garlic - 1 head
  • tahina paste - 3 tbsp.
  • olive oil
  • paprika, salt, pepper
  • lemon juice

Method of preparation:

1. First wash and cut the eggplant in half. Place them on a baking tray lined with foil and brush with olive oil.

2. Separately, you need to wrap the garlic in foil and put it next to the eggplants. Bake the vegetables at 180 degrees for 30-40 minutes.

3. After baking, separate the soft part of the vegetables. It should be shredded with a knife.

4. Mix the chopped vegetables, tahini paste, olive oil, lemon juice, paprika, salt and pepper in a bowl. Mix everything thoroughly. Done!
