How to cook beans with vegetables: an idea of a budget and hearty dish

Bean dishes are quite satisfying, nutritious, and not at all difficult to prepare if you know some of the nuances. This type of legume goes well with almost all vegetables, sauces, cereals, and pasta. The simplest dish of all is bean stew with vegetables and spicy spices. It is very nutritious, hearty and flavorful.

Ingredients:

  • beans - 2 tbsp.
  • sausages - 300 g
  • bell pepper - 1 pc
  • carrot - 1 pc
  • onion - 1 pc
  • garlic - 5 cloves
  • tomato paste - 1 tbsp
  • salt, pepper
  • herbs

 

Method of preparation:

1. Soak the beans overnight in cold water. Then rinse, boil until tender, salt.

2. Dice the bell pepper and onion and fry in vegetable oil.

3. Grate the carrots and add to the vegetables. Sauté for a few minutes.

4. Add tomato paste, chopped garlic, salt and pepper. Cook for a few more minutes.

5. Meanwhile, clean the sausages, cut them into rings and add to the vegetables.

6. After a few minutes, add the beans. Stir and simmer for another 10 minutes.

7. Serve the bean stew with herbs.
