How to bake eggplants in the oven: a budget dish in 15 minutes

Eggplant is a very tasty and hearty vegetable. It can be fried, boiled, baked, added to soups and appetizers. It is worth noting that eggplant goes well with tomatoes, minced meat, mushrooms, cheese, garlic, and of sauces - with mayonnaise and tomato paste.
Food blogger Victoria Teryaeva(viktoriya_teryaeva) shared a recipe for baked eggplant in the oven on her Instagram page.
Ingredients:
- eggplants
- tomato paste
- mozzarella cheese
- olives
- ham
- rucola
- olive oil
- sugar
- salt, pepper
Method of preparation:
1. First wash and cut the eggplants into slices. Place on a baking tray, salt and pepper and drizzle with olive oil. Bake at 180 degrees for 15 minutes.
2. In the meantime, prepare some ingredients: chop the ham, cheese and olives. Mix the tomato paste with the sugar.
3. After baking, brush the eggplants with paste, place the ham, cheese and olives. Bake for another 10 minutes in the oven. Bon appetit!
