Hearty Kharcho soup for lunch: what meat to prepare with

Soup is the perfect meal for lunch. However, you need to make sure that it's hearty. A great option would be to cook Georgian Kharcho, the broth for which is prepared based on sufficiently high-calorie meat.
The idea of cooking Georgian Kharcho soup for a hearty lunch was published on the Instagram page of food blogger Daria Ivanova (eatme_daily). The dish is very flavorful because it contains a lot of spices and herbs.
Ingredients:
- fatty beef or pork meat (ribs are great) - 600-700 g
- onions - 3 pcs
- carrots - 2 pcs
- garlic - 2 cloves
- rice - 100 g
- tomatoes in their own juice - 150 g
- tomato paste - 1 tbsp
- adjika - 1 tbsp
- cilantro, parsley and dill - 30 g
- butter - 20 g
- Khmeli-suneli, coriander and saffron - 1 tsp each
- tkemali (to taste) - 3 tbsp.
- bay leaves - 2 pcs
- salt, oil and pepper
Method of preparation:
1. Melt 10 g of butter in a saucepan, put the meat in and fry until golden brown
2. Add 1 onion and carrot.
3. Pour water so that it covers the meat by two fingers and cook at a low temperature for an hour.
4. Heat the oil and butter in a frying pan.
5. Finely chop the onion and fry for 2 minutes until golden brown.
6. Add tomato paste. Add adjika and spices after 3 minutes and fry for 2 minutes, stirring.
7. Add tomatoes in their own juice or blended tomatoes. Bring to a boil and turn off.
8. It is advisable to separate the meat from the bone and return it to the broth.
9. Rinse the rice several times.
10. Add the bay leaves, dressing, squeezed garlic, half of the chopped herbs and rice to the soup.
11. Season with salt and pepper and cook for 20 minutes.
12. Add 2 tbsp of tkemali sauce and taste 5 minutes before the end. It adds sourness, so you can adjust it to your own taste.
13. Garnish the finished soup with chopped herbs.
