Grated pie with jam: what to add to make the dough crispy and crumbly

Grated pie is a simple and quick homemade pastry. Traditionally, it is made with your favorite jam or preserves, and less often with fresh or frozen berries and fruits, as well as cottage cheese. The most important thing in the pie is the dough, which should ideally be crispy and melt in your mouth.
On her Instagram page, food blogger Tetiana _tanyushina_ shared a recipe for grated pie with jam, for which she advises adding one unexpected ingredient to the dough: mayonnaise. It will make the cake crispy and crumbly.
Ingredients:
- flour - 350 g
- baking soda - 0.5 tsp
- butter - 200 g
- eggs - 1 pc
- sugar - 100 g
- mayonnaise - 1 tbsp
- lemon juice - 1 tbsp
- jam / jam - 250 g
Method of preparation:
1. Sift the flour into a deep bowl, add baking soda and mix.
2. Grate the cold butter into the flour mixture. Grind to a state of crumbs.
3. Mix the egg, sugar, mayonnaise and lemon juice separately. Add the resulting mass to the flour and quickly knead the dough. It will be soft and will not stick to your hands.
4. Wrap one third of the dough in plastic wrap and put it in the freezer. Roll out the rest of the dough thinly and place in a baking dish.
5. Brush the dough with jam.
6. Take out the dough that was in the freezer and grate it on top of the jam.
7. Bake the cake at 180 degrees for 25 minutes.
