Apple pancakes are a great option for a delicious dessert and snack. They are very fluffy, juicy, and moderately fatty. To make them fluffy, the dough should be made with kefir, and for a special flavor, add a little cinnamon.
Food blogger ValeriaYaroshkevych (lera_yaroshkevych) shared a recipe for apple pancakes with cinnamon and cream on her Instagram page.
Ingredients for 4 servings:
- kefir - 1 cup
- egg - 1 pc
- apple - 1 pc
- sugar - 2 tbsp
- cinnamon - 1 tbsp
- salt - a pinch
- flour - 1 glass
- baking powder - 1 tsp
- oil - 1 tsp.
For the cream:
- sour cream 20% or cream cheese - 100 g
- powdered sugar - 60 g
- lemon juice - 2 tbsp.
Method of preparation:
1. To prepare the cream, mix sour cream or cream cheese with powdered sugar and lemon juice until smooth.
2. To make pancakes, first mix the egg, sugar and a pinch of salt until smooth.
3. Pour warm kefir into the mixture.
4. Next, sift the flour and baking powder, and finally add the oil. Mix until the dough is smooth and thick.
5. Peel and cut the apple into cubes, mix with cinnamon and add to the dough. Mix well.
6. Fry the pancakes and serve with cream.
