Fluffy and low-fat pancakes: do you need to warm the kefir?

Pancakes are made in a variety of ways: with water, sour cream, whey, and kefir. If you choose the latter option, the dish will be really tender and very fluffy, but only if you prepare the products properly. All ingredients must be at the right temperature.
Food blogger Oksana Matvieieva (oksana_matvieieva) shared how to make kefir pancakes on her Instagram page.
Ingredients:
- kefir (always warm) – 500 ml
- eggs – 1 pc
- salt – 0.5 tsp
- sugar – 1.5 tbsp
- baking soda – 1 tsp
- wheat flour – 350-400 g
Method of preparation:
1. Pour warm kefir into a bowl.
2. Add the eggs.
3. Add salt and sugar and mix well with a whisk.
4. Sift the flour and baking soda in parts.
5. The consistency of the dough should resemble thick sour cream.
6. Heat a frying pan with oil.
7. Spoon the pancakes into the pan.
8. Cover with a lid to ensure that they are well baked.
9. Put the finished pancakes on a paper towel to remove excess fat.
