Moist, flavorful, soft and fluffy: that's what a perfectly cooked lemon muffin is like. You don't need to use milk, kefir or sour cream to make this cake. It's all about the syrup.
Food blogger Natalia (goptarenkonatali) shared a recipe for a lemon muffin with syrup on her Instagram page.
Ingredients:
Dough:
- flour - 170 g
- sugar - 170 g
- butter - 170 g
- eggs - 3 pcs.
- zest of 2 lemons
- baking powder - 1 tsp.
Syrup:
- juice of 2 lemons
- powdered sugar - 100 g
Method of preparation:
1. Beat eggs with sugar with a mixer until fluffy white mass.
2. Add soft butter. Beat slightly.
3. Gradually add sifted flour, baking powder and zest. Mix well.
4. Cover the mold with parchment and pour the batter. Bake at 180 degrees for 35-40 minutes.
5. Meanwhile, prepare the syrup. Mix lemon juice with powdered sugar.
6. Cool the finished muffin a little and make holes with a toothpick.
7. Pour the syrup over the cake and leave to soak for 1 hour.
