Simple yogurt cheesecake with berries: no need to bake
If you don't have time to bake desserts, this cheesecake is the perfect option. It is based on a curd and yogurt mass that freezes perfectly in the refrigerator. Juicy berries on top will be a great addition.
The idea of making a delicate yogurt cheesecake with berries without baking was published on the Instagram page of food blogger Valeria Veligura (yummy.lera). The bottom layer is an ordinary cookie.
Ingredients for the base:
- 150 g shortbread cookies
- 60 g of butter ⠀ ⠀
Ingredients for the filling:
- 10 g gelatin
- 40 ml of cold water
- 300 g of cream cheese
- 300 g of thick natural yogurt (8-10%)
- 75 g of powdered sugar ⠀
Ingredients for the berry layer:
- 400 g fresh or thawed berries
- 60-80 g of sugar
- 1 tbsp of lemon juice
- 20 g of cornstarch
- 80 ml of water ⠀
How to prepare the base:
1. Grind the biscuits in a blender until they become crumbs.
2. Add the melted butter and mix.
3. Put into the mold and spread evenly over the bottom.
4. Put in the refrigerator while preparing the filling. ⠀ ⠀
5. For the filling, soak gelatin in cold water for 15 minutes. Then melt it in the microwave or on the stove.
6. Beat cream cheese, yogurt, and powdered sugar with a mixer until thickened. Continue beating at low speed and add the melted gelatin.
7. Put the mixture on the cookie base, smooth it out, and put it in the refrigerator for 4-6 hours.
8. For the berry layer, combine the berries, sugar, lemon juice, and starch with water.
9. Stir and cook until thickened. Allow to cool, put on top of the filling, and refrigerate again for 1-2 hours.
