Easy summer salad with beets without mayonnaise: perfect with porridge and mashed potatoes

Beetsalad is a great dish for every day. It is especially delicious to prepare it without mayonnaise and choose a healthy dressing as an alternative. It should also be noted that the salad can be supplemented with any vegetables: cabbage, corn, and even herring, prunes and even nuts.

Foodblogger Varvara with the nickname valerikiry on her Instagram page shared a recipe for a light salad with beets, corn and greens, which is ideal to eat with porridge and mashed potatoes.

Ingredients:

  • boiled beets - 2 pcs
  • tinned corn - 400 g
  • red onion - 1 pc
  • half lemon juice
  • parsley greens
  • vegetable oil - 2 tbsp.
  • salt, pepper

Cooking method:

1. Boil the beets beforehand, then peel and cut them into julienne strips when cooked.

2. Cut the onions in rings, put them in a bowl and pour the lemon juice over them. Leave to marinate for a few minutes.

3. Also chop the greens.

4. Next, transfer the beets, onions, herbs to a deep bowl, add the corn.
