  • banana - 40 g
  • coconut milk 17-20% - 100 g
  • coconut urbech - 80 g
  • lemon juice - 20 g
  • agar-agar - 4 g
  • Jerusalem artichoke syrup - 40 g
  • turmeric - 1 g (for a yellow shade of cream)

For the glaze:

  • water - 250 g
  • Jerusalem artichoke syrup - 15 g
  • agar-agar - 3 g
  • xanthan gum - 1 g
  • lemon juice - 10 g

1. Melt the coconut urbech

2. Combine pineapple, banana, lemon juice, syrup and coconut urbech, turmeric in a blender bowl. Blend everything.

3. Add chia seeds.

4. In a saucepan, cook the mixture of coconut milk and agar for 1-2 minutes.

5. Pour the agar mixture into the cream and whisk.

7. For the glaze, mix everything in a saucepan.
