Delicious dairy-free lemon cookies: how to cook

Just because you don't have milk, kefir or sour cream doesn't mean you can't make delicious homemade cookies. You can make a dessert without these ingredients if you use the following technique. The cookies will have a pleasant lemon flavor and aroma.
The idea of making homemade lemon cookies was published on the Instagram page of food blogger Eduard Nasirov (my_happyfood). The texture will be very soft.
Ingredients:
- 2 eggs
- 0.5 cups of sugar
- 0.5 tsp of vanilla extract
- 120 ml of vegetable oil
- 1 tsp of baking powder
- juice and zest of half a lemon
- 200-220 g of flour
- powdered sugar for forming cookies
Method of preparation:
1. Lightly beat eggs with sugar, pour in vegetable oil, add the rest of the ingredients.
2. Stir the dough until smooth.
3. Using 2 tablespoons, shape the cookies and place them on a well-powdered surface.
4. Grease your hands a little with vegetable oil and make the cookies oval.
5. Put the cookies on a parchment-lined baking sheet at a distance from each other and put them in a preheated oven to 170 degrees for 25-30 minutes.
6. Sprinkle the finished hot cookies with powdered sugar.
7. Store in a container for up to a week. Can be used instead of savoyardi.
