Delicious chicken cutlets without eggs for a hearty lunch: what to add to keep the products from falling apart
Cutlets are a versatile addition to any side dish. To make the products sufficiently dietary and low-fat, it is best to choose chicken meat for the base. And eggs, which are traditionally added to minced meat for density, can be replaced.
The idea of cooking hearty chicken cutlets without eggs for lunch was published on the Instagram page of the MasterChef super finalist Olha Ryabenko (olga_riabenko_). The products will be very soft and juicy.
Ingredients:
- minced chicken - 1 kg.
- garlic - 7 cloves (grated or chopped)
- breadcrumbs - 4 tbsp.
- semolina - 2 tbsp.
- fresh basil - 4 tbsp
- paprika - 0.5 tbsp
- onion - 1 pc.
- butter - 40 g
- flour - 1 tbsp
- broth or water - 400 ml
- cream - 250 ml
- salt, pepper
- mustard - 1 tsp.
Method of preparation:
1. In a large bowl, add 4 cloves of minced garlic, basil, paprika, semolina, breadcrumbs, salt and pepper to the chicken.
2. Mix well and pound the minced meat.
3. Moisten your hands with water or oil and form small cutlets.
4. Fry until golden brown on both sides. Place on a plate.
5. Fry the chopped onion and garlic (with cloves) in the same skillet as the cutlets with butter for 2 minutes.
6. Add the flour, stirring constantly.
7. Pour in the broth (or water) and cream.
8. Then salt, pepper, paprika, mustard to taste.
9. Return the cutlets to the pan in the sauce and cook for 20 minutes over low heat.
10. Sprinkle with fresh basil before serving.
