Delicious and quick aubegine appetizer: cooked in the oven
Aubergines are a great base for a delicious snack. It is prepared in the oven, so all the components remain healthy. The filling makes it juicy and hearty.
The idea for this quick and juicy snack is posted on food blogger Maryana's Instagram page with the nickname hotuyte_ta_smakuyte. You'll only need 25 minutes.
Ingredients:
- aubergines - 1 pc
- salt, oil
Ingredients for the stuffing:
- tomatoes - 1 pc.
- onion - 0,5 pcs.
- hard cheese - 50 g
- dill greens
- eggs - 1 pc.
- sour cream - 1 tbsp.
- mustard - 1 tsp.
- salt, pepper, paprika, dried herbs
Method of preparation:
1. Cut the aubergine into rings.
2. Salt and place on parchment greased with vegetable oil.
3. Drizzle oil on top.
4. Put in the oven for 15 minutes at 200 degrees.
5. For the filling, mix diced tomatoes and onions, dill greens, cheese, egg, sour cream, mustard and spices.
6. Place the filling on the roasted aubergines and put in the oven for another 10 minutes.
