Delicate mini cheesecakes with fruit: no baking required

These mini cheesecakes are much easier to prepare than any cakes and cupcakes. All because the dessert does not have to bake, because the basis is ordinary crushed cookies. The mass perfectly freezes in the refrigerator and comes out very tender. In addition, the dish in this form is very convenient to take with you for a snack and treat someone.
The idea of making cheesecakes with fruit was published on the Instagram page of food blogger OlgaGolovina (olha.holovina).
Ingredients for 30 pcs:
- cookies "To coffee" - 250 g
- butter - 100 g
- fine-grain sour milk cheese - 700 g
- sour cream - 190 g
- water - 120 ml
- gelatin - 25 g
- sugar - 200 g
- vanilla sugar - 2 tsp.
- canned peach - 350-400 g
- gelatin - 10 g
- water - 50 ml
Method of preparation:
1. Crush the cookies in a blender and mix with the melted butter. Fill silicone molds, (2 teaspoons each of this mixture) and tamp it down. Put in the refrigerator for a few hours.
2. The second layer: pour cold water over the gelatine and leave it for 10 minutes to swell. Then melt in a saucepan over low heat, but do not bring to a boil. Let it cool down to room temperature.
3. To the cheese add sour cream, sugar and vanilla sugar. Beat everything with a blender, add gelatin and mix again.
4. Fill the silicone molds, leaving room for the fruit layer. Put in the refrigerator for a few hours to set completely.
5. Fruit layer: pour gelatin with cold water, let it swell and heat up. Chop peaches finely, mix with gelatin and put the third layer, after an hour it has hardened well.
6. Decorate to taste.
