Ingredients:
- courgettes - 1kg
- lemon - 1pc
- orange - 1pc
- sugar - 800g
Method of preparation:
1. First prepare the ingredientsc. Cut courgettes, lemon and orange zest into cubes. Transfer everything into a saucepan.
2. Add sugar, stir and leave to infuse for 30 minutes.

3. Place on the heat, bring to the boil and simmer for 20 minutes. Remove from the heat and cool completely.
4. At this point, put the mass back on the fire, bring to a boil and simmer for 20 minutes. Immediately take out the whole mass and continue to cook the syrup until thickened (this takes 20 minutes). The syrup will be frothy as it should be.
5. When the syrup thickens, add the whole courgettes and citrus mixture to it again. Bring to the boil.
