Cheese soup recipe from a famous food blogger: no one will remain indifferent
Cheese soup is a delicious and fairly light first course that wins the hearts of the most demanding gourmets.
The recipe for cheese soup was shared by food blogger Olha Riabenko. On Instagram, she explained how to make this soup with broccoli so that even children would want to eat it.
Ingredients
- chicken thigh - 4 pieces
- processed cheese - 250 gr
- potatoes - 2 pcs
- carrots - 1 pc
- onion - 1 pc
- leek - 50 g
- orzo pasta - 50 gr
- broccoli - 150 gr
- salt
- pepper
- bay leaf - 1 pc
- ghee - 20 gr
- parsley - 10 gr
- water - 250 ml
Method of preparation
1. Pour water into a saucepan. Add meat, whole onions and bay leaf. Cook broth.
2. Cut potatoes into 1x1 cm cubes and add them to the broth. Cook until the potatoes are tender.
3. Chop leeks and grate carrots on a coarse grater and fry in ghee for 5-7 minutes. Add to the broth.
4. Add processed cheese and stir well to dissolve it.
5. Add orzo pasta and cook for 10 minutes.
6. Disassemble broccoli into florets. Put into a saucepan and cook for 2 minutes.
7. Serve with fresh parsley and croutons.
