Cheese cakes like Kyiv cake: very tender and do not fall apart
Instead of the popular Kyiv cake, you can make cheese cakes. They can be very similar to dessert. Nutty crunch and delicate custard will be a great addition to the products.
The idea of making cheese cakes with nuts and custard was published on the Instagram page of food blogger Irina with the nickname ir.uschp. The cheese cakes will definitely not fall apart.
Ingredients for the cream:
- milk - 350 ml
- yolks - 2 pcs
- egg - 1 pc
- flour - 50 g
- butter - 50 g
- sugar - 120 g
- vanilla extract - optional
For the cheese cakes:
- cottage cheese - 250 g
- egg yolk - 1 pc
- hazelnut flour - 1 tbsp
- wheat flour - 1 tbsp
- sugar - as desired
- rum/cognac flavoring
For the crunch:
1. For the crunch, whip the meringue (1 egg white, 50 g of sugar, whip the egg white until soft peaks, add sugar, whip until stiff, bake-dry for 1 hour at 70-100 degrees), hazelnuts and cashews.
Method of making cheese cakes:
1. Add the yolk to the cottage cheese.
2. Add the flour.
3. Add sugar and rum/cognac flavoring.
4. Knead the dough.
5. Form the cheese cakes.
6. Fry in a frying pan on both sides.
7. Put it on a plate.
8. Spread the prepared crunch on the sides.
9. Pour over the cream.
