Can sauerkraut be added to borscht: an original recipe for a familiar dish

Borsch is a classic Ukrainian first course. In every region of the country, it is prepared according to its own authentic recipes. That's why there is no single classic borsch recipe, because everyone cooks it the way they've been used to since childhood.

Food blogger Liubov Pryimak recently shared a recipe for borsch with sauerkraut. On Instagram, she explained how to make borsch according to the original recipe and not use beets.

Ingredients

  • Pork ribs - 800 gr
  • Potatoes - 4 pcs
  • Sauerkraut - 3 handfuls
  • Water - 3 liters
  • Lard - 100-150 gr
  • Onion - 1 pc
  • Carrots - 1 pc
  • Salt
  • Black pepper
  • Smoked paprika

Method of preparation

1. Fry the ribs in a frying pan until a nice golden color.

2. Put the ribs in a saucepan, cover with water and boil for 40 minutes.

3. Add the potatoes, cut into large cubes, and cook for another 20 minutes.

4. Finely chop the onion and grate the carrots.

5. Fry the bacon in a frying pan until cracklings form, add the chopped vegetables and fry together.

6. Add the sauerkraut, squeezed out of the juice, to the pan and cook for another 40 minutes.

7. Add fried vegetables with bacon and cook for a few minutes.
