Beetroot soup or pink okroshka: an incredibly delicious cool first course

In summer, we won't be craving hot first courses anymore. They will be replaced by cool soups that taste so good in the warm season. It can be, for example, gazpacho or green borscht.
Don't forget about okroshka. It is the cold first course that we all love since childhood. Recently, a food blogger with the nickname recepti_dariko shared a recipe for beetroot soup on Instagram. Its composition resembles okroshka in many ways, and it has a very interesting pink color.
Ingredients
- chicken fillet - 1 pc
- large beetroot - 1 pc
- potatoes - 3-4 pcs
- cucumber - 1-2 pcs
- eggs - 6 pcs
- salt
- pepper
- citric acid
- mustard - 1 tsp
- mayonnaise - 150-200 g
- fresh herbs
Method of preparation
1. Boil chicken fillet and do not drain the broth. Cut the meat into cubes.
2. Boil potatoes in their skin, eggs and beets.
3. Cut all the vegetables except the beets into small cubes and put them in a saucepan. Put the eggs in the same pan.
4. Grate the beets on a coarse grater and put them in a saucepan.
5. Finely chop greens.
6. Add salt, pepper, a little citric acid, mustard and mayonnaise to the pan.
7. Mix everything thoroughly and pour the broth in which the chicken was cooked.
