Traditional fried cheesecakes are a rather rich and high-calorie dish. Therefore, if you carefully monitor your diet and the amount of calories you consume, you should use another cooking option and make cheesecakes in the oven. Also, the cottage cheese will be deliciously combined with coconut flakes.

The idea of making baked coconut cheesecakes was shared by nutritionist Svitlana Fus (dietolog.fus) on her Instagram page.

Ingredients:⠀

  • chicken eggs – 2 pcs.
  • cottage cheese 5-9% – 500 g
  • sugar or sugar substitute – 20 g
  • semolina – 50 g
  • coconut flakes – 60 g
  • olive oil – 5 ml

Method of preparation:

1. Set the oven to a temperature of 160-180 degrees, and prepare the necessary equipment: a mixer and a spoon.

2. Beat the eggs with sugar with a mixer until a dense foam. You can increase the amount of sugar by 50-100 grams if you want sweeter cheesecakes. ⠀

3. Add the cottage cheese, continue beating with a mixer, and add a few drops of oil.

4. Pour in the semolina and coconut and continue whisking.

5. Spoon the cheesecakes onto a baking sheet.

6. Bake for about 30 minutes.

7. In convection mode, set to 160 degrees, and after turning off, let stand for another 10 minutes.
