A simple recipe for pickled zucchini: you can eat the next day
Zucchini can not only be fried in batter or used to make various casseroles, pies, and even pickled. This dish will be a great addition to any side dish or an independent appetizer. You just need to add a few interesting ingredients and you can eat zucchini in a day.
The idea of making pickled zucchini that can be eaten in a day was published on the Instagram page of food blogger Yuliia Sylenko (yulya_sylenko).
Ingredients:
- zucchini – 0.5 kg
- honey – 2 tsp.
- apple cider vinegar – 3 tbsp.
- garlic – 3 cloves
- olive oil (or other to taste) – 100 g
- herbs: basil, cilantro, marjoram
- dill or parsley (dried or fresh)
Cooking method:
1. Cut the zucchini into thin rings.
2. Add salt and leave for 20 minutes.
3. Drain the water from the zucchini.
4. Add oil, chopped garlic, vinegar, seasonings and herbs.
5. Mix well and refrigerate overnight. You can mix it again later.
