A hearty quiche with chicken and vegetables for a quick lunch: delicious for dinner
Lunch must be hearty and balanced. Therefore, a very successful idea will be to cook a quiche, which has both meat and vegetables. It is very hearty and enough for the whole family.
Ingredients for the base:
- 280 g flour
- 150 g butter
- 0.5 tsp. salt
- 1 egg2 tbsp cold water
Ingredients for the filling:
- 300-400 g chicken fillet
- 1 sweet pepper
- 100 g corn
- 100 g string beans
- 6 cherry tomatoes
- 150 g hard cheese
- 300 ml of 30% cream
- 1 egg
- salt, oregano, garlic
1. For the dough, mix the flour with the salt, add the cold butter and rub in the crumbs. Pour in the egg and water and quickly knead the dough. Wrap in clingfilm and leave in the fridge for an hour.
2. Cut chicken fillet into small pieces and fry for 4-5 minutes, salt, add oregano, squeeze garlic.
3. Cut bell peppers into strips and fry for 3-4 minutes, add green beans, fry for another 1-2 minutes. Pour in the corn, salt and sprinkle with oregano.
4 Spread the dough over the mold (24 cm), forming a rim. Add egg, cream, 100g cheese to the chicken and vegetables, mix and pour over the base. Sprinkle the remaining cheese over the tomato halves.
5. Bake in a preheated oven at 200 degrees for 40-45 minutes. Cut once cooled.
