A festive pancake cake that doesn't need to be baked: how to make it

If you want to surprise your guests with a delicious cake, you don't have to bake it. For dessert, you can simply fry pancakes and make a delicate cream. Then you just need to combine everything and enjoy.
The idea of making a festive pancake cake was published on the Instagram page of food blogger Natalia with the nickname smak_nata. tinned cherries are suitable for the filling.
Ingredients for the dough:
- eggs - 4 pcs 190 g
- milk 3.2% - 500 (200+300) g
- cocoa powder - 15 g
- high-grade flour - 170 g
- salt - 1/3 tsp.
- sunflower oil - 20 g
Ingredients for the cream:
- sour cream 20% - 600 g
- cream 33% - 250 g
- mascarpone - 250 g
- sugar - 120 g
- vanillin
- gelatin 180 blum - 14 g
- water - 90 g
Ingredients for the filling:
- frozen pitted cherries - 400 g
- zest of 1 lemon
- sugar - 120 g
- corn starch - 25 g
Ingredients for the ganache:
- milk chocolate - 90 g
- cream 33% - 50 g
How to prepare the filling:
1. Pour the juice from the thawed cherries into the starch, mix.
2. Put the berries in a frying pan, add sugar, zest, mix.
3. When it boils - pour in the starch, mix until thickened.
4. Cool.
Method of preparation of the cream:
1. Add sugar, cream to the mascarpone, beat with a mixer until fluffy.
2. Add sour cream, vanilla.
3. Beat until creamy.
4. Set aside 500 g of cream for the mousse.
Teaching the bottom:
1. Cut eight pancakes to a diameter of 19 cm.
2. Put a pancake on a dish, grease with cream (60 g).
3. Then alternate: pancake, cream.
4. Insert the split ring and reduce it to the size of the pancakes.
To form tubes:
1. Grease the pancake with cream (45 g).
2. Put cherries along the edge, roll into a tube. You need 5.5 pieces of such tubes.
Method of preparation of mousse:
1. Pour the dissolved gelatin into the cream that has been set aside.
2. Mix with a mixer until smooth.
Putting the top:
1. Pour a little mousse on the cake and smooth it out.
2. Put tubes from the sides, forming a spiral.
3. Pour the mousse to cover the pancakes.
4. Put in the refrigerator for an hour.
Method of preparation of ganache:
1. Melt the chocolate and cream in a water bath until smooth and shiny.
2. Remove the cake from the refrigerator.
3. Put the remaining cherry filling in the center.
4. Pour the ganache in a circle.
5. Put the chocolate chips on the edge.
6. Garnish with mint.
7. Send to the refrigerator for 8 hours.
8. Serve the cake immediately after refrigerating.
