Lazy eggplant rolls with original filling: an appetizer option for any occasion
Eggplant is a great vegetable for making delicious holiday rolls. Instead of mayonnaise, which everyone is used to using for this appetizer, you can make an original nut filling. The taste of the dish will really surprise you.
The idea of making eggplant rolls with nuts and garlic was published on the Instagram page of food blogger Kateryna Movchan. You just need to fry the eggplant slices in a frying pan.
Ingredients:
- medium eggplant – 2 pcs.
- walnuts – 70 g
- garlic – 1 clove
- a small bunch of parsley
- salt – to taste
- oil for frying
Method of preparation:
1. Cut off the tails of the eggplant and cut into thin slices.
2. Put the eggplants in a bowl, season with salt, and leave for 30 minutes.
3. Heat a frying pan with a little oil.
4. Pat the eggplants dry with a paper towel and fry on both sides until golden brown.
5. Put the finished eggplant on a paper towel.
6. For the filling, grind the nuts, garlic, and parsley in a blender.
7. Put 1 tsp of the filling on the eggplant and roll it up. Repeat with all the eggplants and filling.
