When you bring eggs from the store or market, you probably put them in the refrigerator right away. After all, keeping them cold allows you to keep them ready to eat for longer, so it seems logical. But in fact it is not so, if we are talking about eggs.

What can be useful to store eggs in the refrigerator

There is one pretty good reason to put the product in the cold. And that is to combat the risk of contracting salmonellosis. The fact is that eggs can carry its causative agent, the bacterium salmonella. And in the heat, it will be passed from one egg to another. And it is in a cold environment that you can stop the multiplication of the pathogen and make the product safer.

However, modern technologies of keeping and caring for chickens reduce the risk of infection with salmonella. Therefore, the likelihood of getting sick if you buy factory eggs is quite low. However, eggs from the market may need such storage.

In any case, salmonella is completely killed by heat treatment. Therefore, well-cooked eggs should not pose any danger at all.

Why you should not put the product in the refrigerator after all

The main reason why you should not waste space in the refrigerator compartment on eggs is that they do not spoil at room temperature. Moreover, it is in the cold that the risk of spoilage for the product becomes higher.

Also, storing in the cold can make the whites and yolk taste sour. This can happen if the eggs are laid at a very low temperature.

At low temperatures, the whipping ability of the egg white is reduced. Therefore, experienced cooks recommend that it is room temperature eggs that should be used for baking.

You might think that in this case you can simply take the product out of the refrigerator and put it to warm up at room temperature for a while, but this can be dangerous. Condensation will then form on the shell, which is a breeding ground for bacteria. So an egg that you put in the refrigerator to neutralize salmonella will become the opposite - more dangerous.
