Potatoes are one of the most versatile ingredients in cooking. But it is quite difficult to store them at home, because in home conditions they quickly become soft, shrivel, turn green and begin to sprout. Therefore, even a small amount of this vegetable may not last until it is on the table.

It turns out that at home it is better to store potatoes in the refrigerator - in the vegetable tray. In this way, it will be fit to eat for about three times longer than at room temperature. A study conducted by the British Food Standards Agency (FSA) found that such storage significantly reduces food waste. That's what made the agency reconsider its standards - previously it did not recommend putting potatoes in the fridge.
Previously, it was believed that storing potatoes in cold conditions could cause the dangerous compound acrylamide to form during cooking. However, these concerns proved to be in vain when tested. Instead, the vitamin C that this vegetable contains is better preserved in the cold.
Experts also advise storing potatoes, even if you don't put them in the refrigerator, not in plastic bags, but in canvas or paper bags. They let air in and prevent moisture from accumulating on the potatoes, which spoils them.
Another key condition is that the potatoes must be stored in the dark. Under the influence of light it can begin to produce chlorophyll and will acquire an undesirable green color. And the green vegetable contains a high concentration of solanine, a poisonous compound that can cause harm if you eat a lot of it. To get rid of this substance, it is enough to cut off the green parts of the potato, but this again increases the amount of food waste.
The experts also gave examples of undesirable neighbors when storing potatoes. If you put them next to onions or tomatoes, they will sprout faster.
