How to make the right dough for puff pancakes: sharing the three main rules

Pancakes are a great breakfast dish, and they can also be an alternative to bread. To make the pancakes fluffy, you need to add baking powder or baking soda to the dough, and it is best to prepare the dough on warm kefir.
Culinarian Julia shared on Instagram a recipe for delicious and fluffy pancakes that will turn out very well.
The basic rules for making dough for pancakes :
- Kefir and egg must be at room temperature.
- The dough should infuse for 15 minutes.
- The finished dough should not be stirred again.
Ingredients:
- Kefir (room temperature) -250 ml.
- Egg (room temperature) - 1 egg
- Flour - 200/230 gr
- Sugar - 2 tbsp.
- Soda - 1 tsp.
- Oil for frying
Method of preparation:
1. Mix the egg and sugar, then pour in the kefir and mix again.

2. Sift the flour in batches and knead into a thick dough. But don't add all the flour at once, add it in batches to make the dough thick.
3. At the end add the baking soda and mix well again. Leave the dough at room temperature for 15 minutes to allow the kefir and baking soda to react. Do not stir the ready dough any more, so that it does not fall and the pancakes will be puffy.

4. Gently spoon the batter onto a hot frying pan with a little vegetable oil and fry on both sides until brown.
