Cheesecake yeast-free Easter cake with cherries and berry glaze: sharing a recipe for a tasty holiday pastry
Each hostess has her most successful recipe for holiday easter cakes. Most often they are made on yeast dough, with a white glaze. But, a very successful option would also be a cheesecake, as well as a yeast-free one.
Culinarian Lisa Glinskaya shared on Instagram a recipe for a tasty yeast-free Easter cake with dried cherries and berry glaze.
Ingredients:
Base:
- cottage cheese - 200 g
- butter - 100 g
- eggs - 2 pcs.
- flour - 150 g
- baking powder - 8 g
- dried cherries - 2,5 tbsp.
Berry glaze:
- berry puree - 60 gr
- sugar - 120 gr
- 5 g gelatine
- water - 25 ml
Method of preparation:
1. Beat the butter, add the sugar and mix, add the eggs and mix.
2. Rub the cottage cheese through a fine sieve, add the cottage cheese to the main mass and mix. Mix the flour and baking powder, add to the curd mass, mix again.
4. Cut the dried cherries in half, add to the batter, mix.
5. Spread the finished dough into molds, up to half of the molds, and place in a preheated 170 C oven for 35-40 minutes.
6. Glaze: soak gelatin with water, leave to swell for 10-15 minutes, mix ready berry puree with sugar, put on a small fire and warm to melt sugar. Then add the swollen gelatin and mix. Afterwards, whisk the mass on high speed until it cools down.
7. Remove the molds from the Easter cake and cover with a thin layer of icing, decorate to your liking. Leave the cake to dry for 8-9 hours.
