Without sausage and mayonnaise: original Olivier salad for the holiday table
Olivier salad is prepared very often, especially in winter and during the New Year holidays. If you want to make the dish lighter, add red fish instead of sausage and replace the mayonnaise with yogurt.
Chef Alex shared on Instagram a recipe for a delicious, dietary Olivier salad, which is made without sausage and without mayonnaise.
Ingredients:
- 400 g of boiled potatoes
- 3 boiled eggs
- 200 g of boiled carrots
- 150 g of peas
- 250 g of boiled chicken or boiled smoked chicken
- 150 g of lightly salted red fish
For the sauce:
- 2 eggs
- 120 g of sour cream or white yogurt
- 1 tsp of starch
- a bunch of dill
- 15 g of oil
- salt, pepper
Method of preparation:
1. Sauce: break the eggs into a bowl, add sour cream or yogurt, salt and pepper, vegetable oil, a bunch of herbs and beat everything with an immersion blender until smooth. Add the starch and mix well, pour the sauce into a ladle, and cook stirring over low heat until slightly thickened. Remove from heat and let cool.
2. Dice the cooked vegetables with the fillet, add the peas, salt, pepper, red fish, sauce and mix.
3. Put the prepared salad in a mold with a ring.
