The healthiest autumn salads are best made from seasonal vegetables, namely beets, pumpkin, cabbage, and carrots. It is best to dress salads with healthy oils rather than mayonnaise.

Cook Liubov shared a recipe for a delicious beetroot salad with herring and canned peas on Instagram.

Tip: herring will give the salad an original flavor!

Ingredients:

  • Boiled beets - 3 pcs.
  • Marinated herring - 250 g
  • Canned green peas - 200 g
  • Onion - 1 pc.
  • Sugar - 2.5 tbsp
  • Vinegar - 2 tbsp
  • Boiled warm water - 200 ml
  • Dill and parsley - 1 tbsp
  • Sunflower oil - 2-3 tbsp
  • Salt, pepper - to taste

Method of preparation:

1. Cut the beets and herring into strips, marinate the onions in water with vinegar and sugar.

2. Put all the ingredients in a bowl, add the peas, season with oil, salt, and mix.
