Beetroot is a versatile vegetable that can be used to make not only borscht but also delicious cold soups and salads, as well as canning, cutlets, and burgers. Beets also go well with fish, meat, oils, and spices.

Ingredients:

  • beets - 2 pcs.
  • arugula - a bunch
  • orange - 1 pc.
  • cheese/goat cheese - 200 g
  • nuts - 30 g
  • balsamic vinegar - 2 tbsp.
  • mustard - 1 tsp.
  • olive oil - 5 tbsp.
  • honey - 1 tbsp.

Method of preparation:

1. Boil or bake beets. When cool, cut them into coarse pieces.

2. For the dressing, mix vinegar, mustard, oil and honey until smooth.

3. Peel orange and cut into slices.

4. Crumble cheese.

5. Lightly toast nuts in a frying pan and chop.

6. Assemble the salad: put arugula, beets, oranges, cheese and nuts and pour the dressing over everything.
