Tastier than pizza: a quick asparagus and cheese pie

Snack pies can be prepared with any filling, and using any dough - from yeast to puff pastry. You can also simply replace it with vegetables, so the dish will turn out not only light, but also very quickly cooked.

What to cook with asparagus

Cook Victoria shared on Instagram a recipe for a delicious asparagus pie with asparagus, cheese, lemon zest and jamon.

Pie recipe

Ingredients:

  • puff pastry - 400 g
  • asparagus - 150-200 g
  • prosciutto, jamon or bacon - 50-70 g
  • hard cheese or cream cheese - 200 g
  • parmesan or mozzarella cheese - 50 g
  • olive oil - 1-2 tbsp.
  • salt, pepper - to taste
  • zest and juice of 1 lemon
  • dill
  • salt, pepper - to taste

Method of preparation:

1. Defrost the dough and roll out 5 mm thick. Make the sides, cut not all the way around the perimeter of the dough. Prick the inside with a fork and bake in the oven at 170-180°C. Bake until lightly browned.

2. Wash the asparagus, break off the tough legs, peel off the tough skin and blanch for 2-3 minutes in boiling water.

3. For the filling: mix the cheese, finely chopped dill, lemon zest and juice, add a little pepper and salt, spices as desired and finely chopped sun-dried tomatoes or oil from them.

4. Take the pastry out of the oven, gently press the middle of the pie base to form a border and spread the spiced cheese on top. Lay the prepared asparagus on top of the cheese, evenly or chaotically (as you prefer), and scatter the jamon or bacon on top of it. Drizzle with olive oil, salt quite a bit, and sprinkle with grated cheese.

5. Cook in the oven for another 10-15 minutes at 180 C.
