Beets are the healthiest, tastiest, and most budget-friendly vegetable. You can make a lot of delicious and light salads, appetizers, and first courses from it.

The cook shared a recipe for a delicious and healthy beetroot salad with pickles and sour cream on Instagram.

Ingredients:

  • beets - 3 pcs.
  • eggs - 4 pcs.
  • pickled cucumbers - 2 pcs.
  • sour cream - 2 tbsp.
  • grain mustard - 1 tsp.
  • salt

Method of preparation:

1. Grate boiled beets together with boiled eggs.

2. Slice cucumbers.

3. Mix beets, eggs and cucumbers in a bowl. Add salt, sour cream and mustard. Stir and you're ready to eat.
