A tasty and quick alternative to homemade pies and casseroles is a delicious, tender semolina cake. You can add any berries, fruits, and even healthy pumpkin as a filling for a bright flavor.
Cook Polina shared a recipe for a juicy, delicious pumpkin semolina cake that will turn out to be very tall and successful on Instagram.
Ingredients:
- semolina - 250 g
- kefir - 250 g
- eggs - 2 pcs.
- vanilla sugar - 1 tbsp.
- sugar - 100 g
- baking powder - 1 tsp.
- butter - 80 g
- grated pumpkin - 200 g
- cinnamon - 1 tsp.
- pumpkin seeds
Method of preparation:
1. Mix semolina with kefir and leave to swell for 10-15 minutes.
2. Beat eggs with sugar and vanilla sugar until white in a separate bowl. Pour in melted butter and add semolina. Then add baking powder and mix well with a spatula.
3. Grate the pumpkin and add it to the batter. Add cinnamon and mix.
4. Pour the batter into a baking dish, level the surface and sprinkle with pumpkin seeds.
5. Put in a preheated oven up to 180 degrees for 35-45 minutes. Check for readiness with a wooden stick.
