Tastes like meat: stuffed eggplant with cheese
Eggplants can be cooked in different ways: baked, fried, stewed with vegetables and sauces. They will also be delicious if stuffed with meat and cheese.
- Minced meat - 400 g
- Mozzarella cheese - 250 g
- Tomato paste - 1 tbsp
- Paprika - a pinch
- Salt - a pinch
- Ground pepper - a pinch
- Oil and salt to coat the eggplants before baking
Method of preparation:
1. Cut the eggplants in half, make cuts, salt and drizzle with oil.
2. Bake in the oven for 40 minutes.
3. Meanwhile, fry the minced meat until half cooked, add mozzarella, tomato paste, salt and spices.
4. Cut out the center of the eggplant, making boats. Fill with the filling, sprinkle with cheese and put in the oven for another 10 minutes.
