Spicy eggplant salad with tomato sauce and honey: recipe for spicy appetizer for winter

Eggplant for the winter can be prepared in different ways: in the form of salads, appetizers, as well as with carrots, peppers and spices. If you like spicy dishes, then you can prepare eggplant salad with a sauce of tomatoes and peppers.

Ingredients:
- eggplants - 1.5 kg
- hot pepper - 1 pc.
- red bell pepper - 0.5 kg
- salt - 1 tsp.
- vegetable oil - 100 g
- 6% vinegar - 190 g
- honey - 100 g
Method of preparation:
1. Wash the eggplants. Cut the eggplant into +/-7mm thick slices. Line a baking tray with parchment and brush with oil. Place the eggplants tightly on the baking tray and brush the top with oil. Bake for 30 minutes at 200 degrees.
2. Hot sauce: put the peppers, garlic and hot pepper through a meat grinder (through the finest mesh) or beat in a blender.
3. Pour the sauce into a saucepan and place the baked eggplants in the sauce. Stir gently, being careful not to damage the vegetables. Simmer together for 15 minutes.
4. Place the appetizer in sterilized jars and roll up. Store in a cool place.
