Simpler than cheesecakes: curd casserole with berries
Curd casseroles can be a great alternative to cheesecakes, and they can also be a complete dessert. Add berries, citrus fruits to enhance the flavor.
- ricotta - 500 g
- eggs - 2 pcs.
- raspberries - 200 g
- sugar - 80 g
- vanilla sugar - 10 g
- shredded coconut - 40 g
- sour cream - 150 g
- cornstarch - 40-50 g
- zest of 1 lime
1. Mix ricotta, eggs, sour cream, coconut shavings, starch, sugar and vanilla sugar. Add the lime zest and stir until smooth.
2. Add the raspberries and stir to evenly distribute it.
3. Pour it into a mold lined with parchment (if the mold is silicone, no need to grease or cover).
4. Bake for 40-50 minutes at 180 C degrees.
