Poltava-style dumplings: what to add to the dough to make the dish puffy

Tip: to make the dough puffy, add baking soda and fresh yeast to the base!
Ingredients:
- kefir - 500 ml
- flour - 700 g
- baking soda - 0.5 tsp.
- fresh yeast - 15 g
- salt - 1 tsp.
Filling:
- Potatoes, liver, cabbage, cheese, berries, etc.
Method of preparation:
1. Dissolve salt, sugar and yeast in warm kefir. Mix flour with baking soda, add to the kefir gradually and knead the dough. Cover with a lid and leave for 20 minutes.
2. Divide the dough into 4 pieces, sprinkle with a little flour. Roll each piece into a sausage, cut into 8-12 pieces (depending on the desired size of the dumplings). Roll each piece, put the filling and form a dumpling.
3. Steam the dumplings for 5-7 minutes.
Transfer the dumplings to a bowl and brush with butter!
