No mayonnaise: tangy and delicious crisp eggplant salad

Eggplant is the perfect vegetable for making a delicious warm salad, as well as stews, spicy caviar. They can also be stuffed, pickled, canned.
Cook Anna shared on Instagram a recipe for a warm eggplant salad with tomatoes, cucumbers and herbs.
Ingredients:
- eggplants - 2 pcs.
- tomatoes - 2 pcs.
- cucumbers - 2 pcs.
- parsley - bundle
- starch - 2 tbsp. l.
- salt - pinch
- oil
Sauce:
- vegetable oil - 2 tbsp.
- garlic - 1 clove.
- barbecue ketchup - 1 tbsp.
- teriyaki - 1 tbsp.
- honey - 1 tsp.
- mustard seeds - 1 tsp.
Preparation method:
1. Wash the eggplants, peel off the skin. Cut into cubes, put them in a bowl, pour water and salt over them and leave them to remove the bitterness.
2. After drying the eggplants, add the starch, mix, fry in plenty of oil until cooked.
3. Dice the cucumbers and tomatoes.
4. Mix everything for the sauce, chop the herbs finely.
5. Transfer all ingredients into a bowl, pour the dressing over the salad, sprinkle with herbs and eat!
