Moderately spicy zucchini ajika for winter

Zucchini can be used to make not only pancakes, fritters and rolls but also delicious appetizers for the winter, such as caviar. They can also be pickled, salted, baked and grilled.
Cook Yulia shared on Instagram a recipe for delicious zucchini ajika with garlic, sugar and vinegar.
Ingredients:
- zucchini - 2 kg
- sweet pepper - 200 g
- carrots - 200 g
- garlic - 3 heads
- tomatoes - 1 kg
- hot pepper - 3 pcs (if you like spicy)
- tomato paste - 140 g
- oil - 120 ml
- sugar - 100 g
- 9% vinegar - 80 ml
- salt - 1-2 tbsp.
Method of preparation:
1. Grind all vegetables through a meat grinder and press garlic.
2. Boil for 20 minutes on high heat, add spices (except vinegar and garlic) and boil for another 10 minutes. Add vinegar and garlic and let simmer for 5 minutes.
3. Transfer the caviar into sterilized jars.
